Caramelized Soy-Honey Roast ๐ฅฉ๐ฏ
⏱ Preparation time: 20 min + 1 hour 15 minutes cooking time
๐จ๐ฉ๐ง๐ฆ Serves 6
๐ Ingredients:
๐ 1 pork roast (about 1.2 kg)
๐ 2 garlic cloves (chopped or pressed)
๐ 1 teaspoon salt (adjust according to the salt content of the soy sauce)
๐ 1 small glass of water (about 10 cl)
๐ In a bowl, mix the honey, soy sauce, garlic, olive oil, salt, and pepper.
๐ Brush the pork roast with this mixture.
๐ If you have time, let it rest in a cool place for 30 minutes to 1 hour to allow the meat to absorb the sauce.
๐ Sear the roast:
๐ Preheat your oven to 200°C (gas mark 6-7).
๐ Place the roast in a baking dish and bake for 15 minutes until golden brown.
๐ Reduce the temperature and continue cooking:
๐ Reduce the oven temperature to 160°C (gas mark 5-6).
๐ Pour a small glass of water into the bottom of the dish to prevent the sauce from burning. ๐ Baste the roast regularly with the cooking juices.
๐ Cook for about 1 additional hour (for a total of about 1 hour 15 minutes).
๐ Let rest and serve:
๐ Once cooked (core temperature of 65-70°C if you have a thermometer), remove the roast from the oven.
๐ Cover it with aluminum foil and let it rest for 10 minutes to keep the meat juicy.
๐ Slice and serve with the caramelized sauce.
๐ Tips:
๐ If you'd like more sauce, add a little water or broth while cooking.
๐ For a more spicy flavor, you can add a pinch of Espelette pepper or grated ginger to the marinade. ๐ Serve this roast with roasted vegetables (carrots, potatoes, zucchini) or white rice to fully enjoy the sauce.
๐ Storage:
๐ Store leftovers in the refrigerator, in an airtight container, for up to 2 to 3 days.
๐ Reheat gently in the oven (150°C) or in a pan, adding a little of the meat's juices to prevent the meat from drying out.
