For the filling:
- 8 slices of ham (cut into pieces or whole)
- 200g grated cheese (Emmental, Comté or Cheddar)
- 100g mozzarella (optional, for extra melted cheese)
For cooking:
- A little butter or oil
Step-by-step preparation:
1. Prepare the crepe batter
In a bowl, mix together flour, baking powder, and a pinch of salt. In another bowl, whisk together eggs, milk, and olive oil. Pour the wet ingredients over the dry ingredients and mix until a smooth, homogeneous batter forms. Let rest for 10 minutes.
2. Cook the crepes
Heat a non-stick pan with a little butter or oil. Pour a small ladle of batter to form a crepe. Cook for 1-2 minutes until bubbles form on the surface. Place a slice of ham and sprinkle with grated cheese (and mozzarella if desired) directly onto the crepe while it's cooking. Cover with a little batter to enclose the filling. Flip gently and cook the other side for 2 minutes, until the cheese is melted.
3. Serve hot
Repeat the process with the remaining batter and filling. Serve the crepes hot with a green salad or steamed vegetables for a balanced meal.
